~Girls In The Kitchen: Popcorn Crunch~

Recently, the girls were in the kitchen whipping up a quick, simple, healthful, and addicting snack- popcorn crunch courtesy of the Homestead Blessings Cookbook.

We love carmel popcorn around here, but rarely make it because it takes a reasonably healthy snack and turns it into junk food. Now I never need worry about that again because this treat is the perfect compromise!


Doubling the recipe for this big crowd, a couple cups of chopped nuts (we used pecans) are mixed in with a huge bowlful (24 cups) of popped, salted popcorn. 


 My wasn't my little Lydia feeling goosey!!??


 A cup each of butter and honey were warmed and poured over...


Followed by some more serious mixing.


 And then baked in the oven to the desired crunchiness.


I dumped the whole pan out onto the counter to cool and harden up a little bit more and by the time I went to bag it later, it was nearly half was gone. Can't say that I didn't help out my fair share though- I'm a sucker for sweetened, buttered pecans.
